Step 1
Bring a pot of water to a boil and cook the spaghetti until it’s almost done (about 90%). Drain and rinse with cold water to stop it from cooking further.

Heat some oil in a pan over medium-low heat. Add the chopped garlic and onions, and sauté for 2-3 minutes until they soften.

Add the minced chicken to the pan and cook for 5-7 minutes, breaking it up as it cooks. Season with salt, pepper, and chili flakes, then stir well.

Pour in the vinegar, soy sauce, and chili sauce, and cook for another minute. Add the chicken stock and tomato paste, stirring to combine. Let it simmer for 5-7 minutes until the sauce thickens.

Once the sauce has thickened, stir in the chopped coriander and remove the pan from the heat.

Serve the cooked spaghetti on plates, spoon the meat sauce over the top, garnish with a little extra coriander, and enjoy!
