Step 1
Bring a pot of water to a boil, then add a little oil, some salt, and the penne pasta. Cook it until itβs almost done, about 90%.
Step 2
While the pasta is cooking, heat some oil in a large pan. Toss in the chopped garlic and sautΓ© for about a minute until fragrant.

Add the chicken pieces to the pan and cook them for 4 to 5 minutes until they start to brown. Season with salt, chili flakes, pepper, a splash of vinegar, and soy sauce. Let it cook for another minute.

Throw in the orange carrot, red carrot, spring onions, capsicum, red chilies, and cabbage. Stir everything together and cook for 2 to 3 minutes until the veggies are just tender.

Drain the pasta and add it to the pan with the chicken and veggies. Mix in some tomato ketchup and fresh coriander leaves. Give it a good stir to combine everything well.
