Warm your oven to 300°F and lightly spray a large baking sheet with cooking spray. In a small saucepan, combine the peanut butter, oil, and honey, then warm it over low heat, stirring until the mixture is smooth and easy to pour. While that’s heating, take one cup of oats and pulse them in a blender or food processor until they’re finely ground. In a big bowl, mix those ground oats with the rest of the oats, sugar, and salt. Once the peanut butter mixture is ready, pour it over the oat mixture and stir everything together really well. Spread the mixture evenly on your prepared baking sheet. Pop it in the oven and bake for about 30 minutes, giving it a good stir every 10 minutes so it cooks evenly. When it’s done, let it cool for 10 minutes, then break it up into chunks and leave it on the baking sheet until it cools completely. Store your granola in an airtight container at room temperature, and enjoy it within a week.
