Gently heat some vegetable oil in a large skillet over medium heat. Toss in the onion, garlic, and a pinch of red pepper flakes, cooking until the garlic turns a nice golden color, about 2 to 3 minutes. Next, add the shrimp and cook, stirring occasionally, until they start to firm up, which should take around 5 minutes.

Then, stir in the tomatoes, peanut butter, and red chile paste, and bring everything to a gentle boil. Once boiling, lower the heat and let it simmer until the sauce thickens nicely, about 20 minutes.

While the sauce is simmering, put the noodles in a big bowl and cover them with hot water. Let them sit for about 15 minutes until they soften, then drain and give them a good rinse.

To serve, divide the noodles onto plates and spoon the spicy shrimp peanut sauce over the top. Finish each dish with a sprinkle of fresh cilantro, a dollop of yogurt, and a handful of peanuts for some crunch.
