Directions
In a medium bowl, mix together the cream cheese, Cheddar, pear, the white part of the scallion, salt, and pepper until everything is well combined. Lightly spray a large piece of plastic wrap with cooking spray, then spoon the cheese mixture onto it. Use the plastic wrap to help shape the mixture into a ball, making sure it’s tightly packed. Wrap it up completely and pop it in the fridge for at least an hour, or you can leave it up to two days if you want to make it ahead. When you’re ready to serve, toss the pecans and the green parts of the scallion together in a shallow dish. Roll the chilled cheese ball in the pecan and scallion mixture, pressing gently so the nuts stick all over.
