Step 1
Gently heat your oven to 350Β°F (175Β°C) and grease a 12-cup muffin tin. In a big bowl, whisk together the flour, baking powder, cinnamon, and salt. In another bowl, mix the eggs, milk, oil, applesauce, half a cup of brown sugar, and vanilla until well combined. Pour the wet ingredients into the dry and gently stir just until everything is moistenedβdonβt overmix.

Melt the butter or margarine and stir in a quarter cup of brown sugar along with the pecans. Spoon this sticky pecan mixture evenly into the bottom of each muffin cup. Then, drop about a quarter cup of the muffin batter on top of the pecans in each cup.

Pop the tin into the oven and bake for about 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. When theyβre done, carefully flip the pan onto a piece of foil and let it sit for a couple of minutes before lifting the pan off. This helps the sticky pecans release nicely. Enjoy!
