Step 1
Gently heat your oven to 350°F (175°C). Place the bell peppers cut-side up in a baking dish that's about 10 by 15 inches, then sprinkle them lightly with salt. Pour in enough water to cover the bottom of the dish about a quarter of an inch deep.

Grab a large skillet and warm it over medium-high heat. Add the ground beef and cook it, breaking it apart with a spoon, until it’s nicely browned and crumbly—this usually takes around 5 to 7 minutes. Drain off any excess grease. Stir in the tomato sauce, tomato paste, a teaspoon of salt, oregano, and some black pepper. Let it all come to a boil, then reduce the heat and simmer gently for about 15 minutes so the flavors can blend together.

Now it’s time to fill those peppers. Start by spooning a generous tablespoon of cottage cheese into each one. Add a layer of mozzarella, followed by a layer of cheddar, and then top it with the meat sauce. Finish by sprinkling extra mozzarella and cheddar on top for a nice cheesy crust.

Pop the dish in the oven and bake for 50 to 65 minutes. You’ll know it’s ready when the peppers are tender and the cheese is melted and bubbly. Let them cool for a few minutes before serving, then enjoy!
