- Let the salsa sit for at least 30 minutes to allow the flavors to meld.
- Adjust the level of spice by adding more or fewer jalapeños.
Step 1
Combin the onion, tomatoes, green and red bell peppers, Anaheim chiles, banana peppers, and jalapeños in a large pot. Add in the tomato sauce, tomato paste, vinegar, diced tomatoes, and brown sugar, then sprinkle in the chili powder, Italian seasoning, and a pinch of salt. Bring everything to a boil, then lower the heat and let it simmer gently for about an hour.
Step 2
Once it's cooked down, mix the cornstarch with a little water until smooth, and stir it into the salsa to help thicken it up. When you're happy with the consistency, carefully ladle the hot salsa into sterilized jars, leaving about half an inch of space at the top. Seal the jars tightly and process them in a boiling water bath for 15 minutes to preserve.
Step 3
If you don’t plan to seal the jars, just pop them in the fridge and enjoy within a reasonable time.
