Step 1
Puls cauliflower florets in a food processor until they look like rice. Pour the cauliflower rice into a saucepan, add some water, and cook it gently over medium-low heat for about 10 to 15 minutes. Once it’s cooked, transfer it to a bowl and pop it in the fridge to chill completely—this usually takes around 30 minutes.

While the cauliflower cools, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. When the cauliflower rice is nice and cold, spread it out on a clean kitchen towel. Wrap it up and give it a good squeeze to get rid of as much moisture as possible.

Now, toss the dried cauliflower rice into a large bowl with the eggs, mozzarella, Parmesan, paprika, oregano, and a pinch of salt. Mix everything together really well until it forms a dough-like mixture. Spread this out onto your prepared baking sheet, shaping it into a round pizza crust.

Pop the crust in the oven and bake for about 20 minutes. Once it’s done, let it cool completely before carefully flipping it over. Then you’re ready to add your favorite toppings and finish baking if you like!
