Step 1
Warm your oven to 350 degrees F. While itโs warming up, drizzle a little olive oil into a pan over high heat. Once itโs hot, add the sausage and cook it, breaking it up as it brownsโthis usually takes about 5 to 7 minutes. Toss in the chopped peppers and cook everything together until the peppers soften, about 5 more minutes. Take the pan off the heat and let the mixture cool for a bit.
Step 2
In a big bowl, whisk the eggs with Parmesan, hot sauce, salt, and pepper until everythingโs combined. Stir in the cooled sausage and pepper mixture. Give a 12-cup muffin tin a good spray with olive oil cooking spray, then pour the egg mixture evenly into the cups.
Step 3
Pop the muffin tin into the oven and bake for 15 minutes. While the frittatas are baking, warm the remaining olive oil in another skillet over medium-high heat. Add the garlic, onion, and oregano, stirring for a couple of minutes until fragrant. Then add the tomatoes and let everything simmer gently until the sauce thickens, which should take about 10 minutes.
Step 4
Once the frittatas are done baking, take them out and spoon some of the tomato sauce over each one. Sprinkle a little mozzarella cheese on top, then put them back in the oven for about 5 minutes so the cheese can melt. Finish by garnishing with fresh parsley and basil before serving. Save any leftover sauce for dipping or extra flavor on the side.
