Warm a little oil in a small pan over medium heat. Toss in the jackfruit and cook, stirring often, for about 2 to 3 minutes. Pour in a tablespoon of water along with the taco seasoning, then stir everything together until the spices are well mixed in, which should take about a minute. If the mixture feels too dry, add a bit more water, one tablespoon at a time, until it looks just right. Once the jackfruit is nicely seasoned and heated through, spoon some into each taco shell. Top each one with a couple of tablespoons of your favorite salsa, and you’re good to go!
