Step 1
Bring a large pot of lightly salted water to a boil. Add the rice vermicelli and cook uncovered, stirring now and then, until tender—this usually takes about 5 to 6 minutes, depending on the noodle thickness. Once cooked, drain the noodles and rinse them under cold water to stop the cooking and keep them from sticking.

Put the vermicelli in a big bowl and toss in the pomelo, carrot, cucumber, scallion, and cilantro.
