Warm your oven to 400Β°F (200Β°C). Toss the pineapple and peppers with a tablespoon of olive oil on a baking sheet, then roast them for about 15 to 20 minutes until theyβre nicely browned, stirring now and then so they donβt burn. While thatβs cooking, warm the rest of the olive oil in a large skillet over medium heat and sautΓ© the onion until itβs soft and fragrant, about 5 minutes.
