Directions
Lightly heat a skillet over medium-high heat and spraying it lightly with cooking spray. Quickly brown the pork chops on both sides, just until they get a nice color, then set them aside. Next, layer the sweet potato slices in the bottom of your slow cooker. On top of that, add the onion slices, followed by the apple slices. Sprinkle the apples with brown sugar, a pinch of nutmeg, some salt, and freshly ground pepper. Place the browned pork chops over the fruit and veggies, then cover everything with the sauerkraut. Cover the slow cooker and let it cook on low for about 5 hours. If you need to leave it a bit longer, it should be fine for another hour without drying out. When it’s done, serve the pork and veggies with some of the cooking juices spooned over the top for extra flavor.
