Step 1
Gently heat your oven to 400Β°F (200Β°C). Set a baking rack inside a large, shallow baking sheet with sides to catch any drips.
Step 2
Sprinkle both sides of each pork chop with onion powder, garlic powder, and lemon pepper seasoning. Then, pour some cornflake crumbs into a shallow dish and press each chop into the crumbs, using a fork to help them stick well. Shake off any extra crumbs and place the chops on the baking rack.
Step 3
Pop the pork chops into the oven and bake until theyβre cooked through and no longer pink in the middle, about 30 to 45 minutes. If you have a meat thermometer, look for 160Β°F (70Β°C) in the thickest part of the chop to be sure.

While the pork is baking, toss the apple wedges into a large saucepan over medium heat. Pour in enough apple juice to cover the apples by about two inches. Stir in cinnamon, allspice, vanilla extract, and brown sugar. Bring it all to a boil, then lower the heat and let it simmer gently until the apples are tender when poked with a forkβthis should take around 30 minutes.

When everythingβs ready, plate a pork chop and arrange the soft apple slices around it in a pretty pattern. Spoon some of the apple cooking liquid over the top and serve the rest on the side for dipping.
