Gently heat your grill to medium-high and give the grates a light brush of oil so nothing sticks. Tear off six pieces of aluminum foil, each about 18 inches long, and set them aside. In a bowl, toss the potatoes and garlic scapes with a good drizzle of olive oil, then season everything with salt and pepper to your liking. Divide the mixture evenly onto each piece of foil, then fold up the edges to create sealed packets. Place the foil packets on the hot grill, close the lid, and let them cook for about 20 to 25 minutes. Be sure to turn the packets halfway through so everything cooks evenly.
