Step 1
Lightly heat your oven to 450°F (230°C). Toss the potato chunks with a good drizzle of olive oil right in a 9x13-inch baking dish, making sure they’re well coated. Pop the dish in the oven and let the potatoes roast for about 10 minutes.

After that, take the dish out and add the cremini mushrooms, chopped onion, honey, and all the herbs and spices—rosemary, thyme, sage, mustard powder, garlic powder, salt, and pepper. Give everything a good stir so the flavors start to meld together.

Put the dish back in the oven and roast for another 15 minutes or so, until the mushrooms are soft and the potatoes are perfectly tender. Once everything’s cooked through, it’s ready to serve!
