- Choose a thick yogurt like Greek yogurt for a creamier parfait.
- Add a bit of honey or maple syrup to sweeten the yogurt if you prefer a sweeter taste.
Step 1
Combin the rhubarb, water, and a pinch of salt in a medium saucepan over medium-high heat. Let it come to a boil, stirring every now and then. Once boiling, turn the heat down to medium-low and let it simmer, stirring occasionally, until the rhubarb breaks down and softens, about 6 to 8 minutes. Stir in the honey and keep cooking for another 2 to 3 minutes until the mixture thickens a bit, then take it off the heat.
Step 2
Line up five jars (about 12 to 16 ounces each) so you can assemble the parfaits easily. Spoon about 2 tablespoons of the rhubarb mixture into the bottom of each jar. Sprinkle 2 tablespoons of cracker crumbs on top, then add around 2/3 cup of yogurt.
Step 3
Repeat by adding the remaining rhubarb and cracker crumbs over the yogurt. Finish each jar with a tablespoon of crushed walnuts. Seal the jars and pop them in the fridge until you’re ready to enjoy.
