Step 1
Trim off any extra fat from the pork and cutting it into four equal pieces. Sprinkle each piece generously with salt. Heat some canola oil in a skillet over medium-high heat, then brown the pork in batches, cooking each side for about 8 minutes until you get a nice crust. Once browned, transfer the pork to a plate and rub the taco seasoning all over each piece.

Pour the broth into your pressure cooker and set a rack inside. Place the seasoned pork on the rack, secure the lid, and bring it to low pressure over medium-low heat. Let it cook until the pork is tender and easy to shred, which should take around 45 minutes. When it’s done, allow the pressure to release naturally for about 15 minutes before opening the lid.
