Step 1
Put the dates in a bowl and pouring enough boiling water over them to cover. Let them soak for about 10 minutes, then drain and set aside. In a food processor, combine the oat flour, protein powder, and cocoa powder until everything is well mixed. Add the soaked dates, half of the pecans, half of the coconut, along with the vanilla and a pinch of salt. Pulse the mixture, adding a little water if needed, until it comes together into a soft dough.
Step 2
Move the dough to a mixing bowl and stir in the remaining pecans, coconut, and chocolate chips until evenly distributed. Lay a piece of parchment paper on your work surface and drop the dough on top. Place another sheet of parchment over it, then roll it out gently to about half an inch thick. Pop it in the fridge for a couple of hours until it firms up.

Once chilled, slice into 12 bars and enjoy!
