Why This Dish Is Amazing
Helpful Kitchen Tips
- Avoid overmixing the batter to keep the cake light and fluffy.
- Let the cake cool completely before slicing to maintain its structure.
Step 1
Gently heat your oven to 350°F and greasing a 9x13-inch pan so the cake doesn’t stick. Melt the butter by microwaving it in a bowl for about 30 seconds, then stir. If it’s not fully melted, keep microwaving in short bursts until smooth, then set it aside to cool a bit. In a large bowl, mix together the cake mix, eggs, pumpkin, milk, oil, and pumpkin spice with a hand mixer until everything is blended nicely. Pour this batter into your prepared pan.
Step 2
Make the creamy topping by beating the melted butter and Neufchatel cheese together for a few minutes until smooth and fluffy. Gradually add the powdered sugar, about half a cup at a time, mixing well after each addition. Stir in the vanilla and a pinch of salt. Drop spoonfuls of this mixture over the cake batter and gently swirl it around with a knife to create a marbled effect. Sprinkle pumpkin spice chips over the top for a little extra flavor.
Step 3
Pop the cake in the oven and bake for about 38 to 42 minutes, or until a toothpick inserted in the center comes out clean. Once it’s done, take the cake out and let it cool completely on a wire rack before slicing and serving.
