Step 1
Combin the bread flour, sweet potatoes, whole wheat flour, cake flour, eggs, brown sugar, water, butter, milk powder, yeast, and salt in a large bowl. Mix everything until it comes together into a dough, adding a little more water if it feels too dry. Once the dough forms, turn it out onto a floured surface and knead it for about 6 to 8 minutes until it’s smooth and stretchy.
Step 2
Lightly oil a bowl and place the dough inside, then cover it with plastic wrap or a damp towel. Let it rest in a warm spot for about an hour, or until it’s roughly doubled in size.
Step 3
After the dough has risen, gently punch it down to release the air. Divide it into 16 equal pieces and roll each piece into a smooth ball. Arrange the balls on oiled baking sheets, cover them again, and let them rise for another 40 minutes until they puff up nicely.
Step 4
While the dough is rising the second time, preheat your oven to 350°F (175°C). When the buns have doubled, take off the cover and pop them in the oven. Bake for 12 to 15 minutes, or until the tops turn a lovely golden brown. Let them cool a bit before enjoying!
