Combine the cream cheese, brown sugar, and vanilla extract in a bowl until itβs nice and smooth. Pop it in the fridge for about 30 minutes to chill. While thatβs cooling, toss the chopped strawberries, pineapple, grapes, and blueberries together in another bowl, just enough to combine them. When the cream cheese mixture is cold, spoon about 3 tablespoons into the bottom of each plastic cup, spreading it out to make a half-inch thick layer. Next, pile on the mixed fruit to create a 2-inch layerβaround a third of a cup per cup works well. Sprinkle a teaspoon or two of crumbled sugar cookies over the fruit, then finish each cup with a slice of kiwi for a little pop of color. Keep the cups in the fridge until youβre ready to take them on the go.
