Step 1
Ad the chicken, salsa, chiles, onion, jalapeno, garlic, sazon, cumin, salt, and pepper to your Instant Pot. Give everything a quick stir to combine, then close the lid and make sure itβs locked. Set the pressure cooker to high and cook for 10 minutes. It will take about 10 to 15 minutes to build up pressure before the timer starts.
Step 2
When the cooking time is up, let the pressure release naturally β this can take anywhere from 10 to 40 minutes, so be patient. Once the pressure has fully released, carefully open the lid.
Step 3
Switch to the sautΓ© setting and use two forks to shred the chicken right in the pot. Let it simmer for a few minutes until the sauce thickens to your liking. Taste and add a little more salt and pepper if needed. Serve topped with fresh cilantro and a squeeze of lime juice for a bright finish.
