Bring some water to a boil in a saucepan, then add the quinoa. Turn the heat down to medium-low, cover the pot, and let it simmer until the quinoa is tender and all the water is absorbedβthis usually takes about 15 to 20 minutes. While the quinoa cooks, roughly chop the carrot in a food processor. Then add the cooked quinoa, garbanzo beans, green onions, bread crumbs, egg, garlic, and cumin to the processor and pulse just until everything is combined. Transfer this mixture to a bowl and stir in the peas and corn. Pop the bowl into the fridge for about 15 minutes so the mixture firms up a bit, making it easier to shape into patties. When ready, heat some olive oil in a skillet over medium heat and cook the patties until theyβre golden brown on both sides, about 4 to 5 minutes each. For a simple sauce, mix together yogurt, tahini, lemon juice, cilantro, and curry powder, then serve it alongside your burgers.
