Step 1
Heat a tablespoon of olive oil in a pot over medium-high heat. Toss in the chopped onion and cook it until itβs soft and fragrant, about 5 minutes. Next, add the quinoa and stir it around for a couple of minutes until it smells nutty and is lightly toasted. Pour in the broth, bring everything to a boil, then lower the heat, cover the pot, and let it simmer gently until all the liquid is absorbedβthis should take about 20 minutes.
Step 2
While the quinoa is cooking, mix the black beans, diced tomato, bell pepper, and avocado together in a bowl. For the dressing, blend the cilantro, lime juice, a couple of tablespoons of olive oil, Greek yogurt, chipotle pepper, some of the adobo sauce (about a tablespoon), honey, cumin, salt, and pepper until itβs nice and smooth.

Once everything is ready, pour the dressing over the black bean mixture, add the cooked quinoa, and gently toss everything together so all the flavors come together.
