Beat the eggs in a large bowl. Add the milk, cream, vanilla, and nutmeg, then whisk everything together until it’s smooth and well combined. Gently fold in the bread cubes and let the mixture sit for about 5 minutes so the bread can soak up all those flavors.

In another bowl, toss the sliced apples with brown sugar, cinnamon, and melted butter until they’re nicely coated. Grease a 9x13-inch baking dish, spread the apple slices evenly on the bottom, and then pour the soaked bread mixture over the top. Cover the dish tightly with foil and pop it in the fridge overnight.
