Step 1
Gently heat your oven to 400Β°F (200Β°C). Line a large baking sheet with foil and give it a quick spray of cooking oil to keep things from sticking. While the oven warms up, heat a tablespoon of oil in a medium pot over medium-high heat. Toss in the brown rice and let it toast for a couple of minutes before adding water and a pinch of salt. Cover the pot, turn the heat down to low, and let the rice simmer until all the water is absorbed, about 20 to 30 minutes.
Step 2
On the prepared baking sheet, arrange the sausages on one side, then line up the onions and Brussels sprouts next to them. Sprinkle the veggies with garlic powder, salt, and pepper, and drizzle 1 1/2 tablespoons of oil over everything. Give the veggies a good toss so theyβre evenly coated. Pop the tray into the oven and roast for 10 minutes.
Step 3
After that, take the baking sheet out and give the veggies a stir while flipping the sausages over. Add the bell peppers to the tray, drizzle the remaining half tablespoon of oil over them, and season with a bit more salt and pepper. Toss the peppers with the other veggies, then slide the tray back into the oven for another 10 minutes. Once everything is nicely roasted, let it cool for a few minutes.

Slice the sausages into bite-sized pieces, then divide the rice, veggies, and sausage evenly into your meal prep containers. Finish each bowl off with a sprinkle of Parmesan cheese for a little extra flavor.
