Tos the cubed halibut, lime and lemon juices, tequila, minced jalapeno, and half of the diced mango into a non-metallic bowl. Cover it up and pop it in the fridge for about an hour and a half to let the flavors meld and the fish โcookโ in the citrus.
Step 2
Once thatโs ready, stir in the green pepper along with the sweet and red onions. Give everything a good mix, cover again, and chill for another 30 minutes to let those veggies soften a bit and blend in.
Step 3
Finally, gently fold in the rest of the mango, along with some fresh cilantro and parsley. Taste it and add salt as needed before serving. Itโs best enjoyed chilled and fresh!
