Step 1
Toast the pine nuts in a dry skillet over medium heat. Keep them moving in the pan so they don’t burn — it should take about 5 minutes. Once they’re golden and fragrant, set them aside to cool.

Pour the quinoa, water, and a pinch of salt into a saucepan. Bring it to a boil, then lower the heat to medium and let it simmer until the quinoa is tender and the water is absorbed, which usually takes around 10 minutes. Take it off the heat and let it cool for a bit before fluffing it up with a fork.
Step 3
Transfer the quinoa to a bowl, then mix in the toasted pine nuts, fresh lemon juice, chopped celery and onion, a pinch of cayenne, some cumin, and plenty of parsley. Give it a taste and add more salt or pepper if you think it needs it. Serve and enjoy!
