Gently heat your oven to 375Β°F (190Β°C) and give an 8-inch pie pan a quick spray with cooking spray to keep things from sticking. In a saucepan, bring the water and brown rice to a boil, then lower the heat to medium-low. Cover it up and let it simmer gently for about 45 to 50 minutes, or until the rice is soft and all the water is gone. While the rice is cooking, mix together the peanut butter, applesauce, honey, and egg in a bowl until smooth. Once the rice is ready, add it to the bowl along with the garbanzo bean flour, oats, currants, coconut, sunflower seeds, chia seeds, baking powder, and cinnamon. Stir everything well until itβs all combined. Pour the mixture into your prepared pie pan and spread it out evenly. Pop it in the oven and bake for around 20 minutes, or until you see the edges turn a nice golden brown. Let it cool slightly before digging in!
