Helpful Kitchen Tips
- Gently fold the Guinness into the batter to keep it light and airy.
- Use a water bath when baking to prevent cracks and keep the cheesecake moist.
Step 1
Lightly heat your oven to 325°F (165°C). In a bowl, mix together the graham cracker crumbs and melted butter until everything is nicely combined, then press the mixture firmly into the bottom of an 8-inch springform pan to form the crust.
Step 2
In a large bowl, beat the cream cheese, brown sugar, eggs, vanilla, and cinnamon together until smooth and creamy. Slowly stir in the Guinness until the batter is thin and well blended. Pour this over the crust in the pan.
Step 3
Pop the cheesecake into the oven and bake for about 40 to 60 minutes, or until it’s puffed up and set in the center. Once it’s done, let it cool completely.
Step 4
While it cools, gently melt the chocolate chips with the cream in a double boiler, stirring often and scraping the sides so it melts evenly without burning. Spread the melted chocolate over the cooled cheesecake, cover it with plastic wrap, and chill in the fridge for at least 4 hours, or overnight if you can wait that long.
