- Roast the asparagus at a high temperature for a nice caramelized flavor and slight crispness.

Step 1
Warm your oven to 400Β°F (200Β°C). Spread the asparagus out in a single layer on a large baking sheet, sprinkle with some salt, and give them a good drizzle of olive oil. Toss everything together so the asparagus gets nicely coated. Pop them in the oven and roast until theyβre tender, about 10 minutes.

While the asparagus is cooking, melt the butter in a saucepan over medium heat. Once melted, stir in the flour and keep whisking until the mixture turns smooth and takes on a light golden colorβthis should take around 2 minutes. Slowly add the half and half along with the mustard powder and paprika, whisking constantly for another couple of minutes to make a creamy base.
Step 3
Stir in the smoked Gouda cheese and keep whisking until the cheese melts completely and the sauce thickens, which usually takes about 5 minutes.
Step 4
When the asparagus is done roasting, transfer it to a serving dish and generously spoon the smoky cheese sauce over the top. Serve warm and enjoy!
