Step 1
Lightly heat your oven to 400°F (200°C). In a big bowl, mix together the mustard, mayo, minced garlic, and the zest and juice from one lime until everything’s well combined. Season the chicken drumsticks and thighs with salt and garlic pepper, then toss them in the bowl with the sauce, making sure each piece is nicely coated. Arrange the chicken in a baking dish in a single layer.
Step 2
Pop the chicken in the oven and roast it for about 40 minutes, or until it’s golden and the juices run clear when you poke it. While the chicken is cooking, chop up the tomatoes, jalapeño, onion, and cilantro, then stir them together in a bowl. Add a pinch of salt and squeeze in the juice of another lime to brighten things up.
Step 3
Once the chicken is done, take it out of the oven and spoon some of the pan juices over the top. Serve it with a generous helping of that fresh tomato salsa and sprinkle some parsley on top for a little extra color and flavor. Enjoy!
