Step 1
Gently heat a large skillet over medium-high heat and giving it a quick spray with non-stick cooking spray. Toss the corn into the hot pan and cook it, stirring now and then, until it gets nicely browned but watch out that it doesn’t burn. Once it’s done, transfer the corn to a big bowl.
Step 2
Add the tomatoes, onion, bell pepper, and jalapeño peppers to the corn. If you like a little extra heat, sprinkle in some of the reserved jalapeño seeds. Then stir in the chipotle peppers, lime juice, olive oil, and fresh cilantro. Give everything a good mix and season with salt to your taste. Enjoy!
