Directions
Lightly heat your oven to 375ยฐF (190ยฐC). Line a baking sheet with foil and give it a quick spray with cooking spray to keep the fish from sticking. Melt the butter in the microwave for about 15 to 30 seconds, then let it cool a bit before stirring in the grapeseed oil. Lay the salmon fillets skin-side down on the prepared sheet, brush them generously with the butter and oil mixture, and sprinkle 1 1/2 teaspoons of Greek seasoning over the top. In a small bowl, combine the crushed pistachios, bread crumbs, and the remaining teaspoon of Greek seasoning. Press this crunchy mixture evenly onto each piece of salmon. Pop the salmon in the oven and bake for around 20 minutes, or until it flakes easily when you poke it with a fork.
