Lightly heat your oven to 450Β°F (230Β°C) and line a baking sheet with parchment paper. Cook the bacon in a large skillet over medium-high heat, turning it every now and then until itβs nicely browned, which should take about 10 minutes. Once cooked, drain the bacon on paper towels and chop it into pieces.

Whip up a quick aioli by mixing together mayonnaise, minced garlic, chopped chives, salt, and pepper in a small bowl. Roll out the puff pastry into a 12-inch square and spread the aioli evenly over the surface. Sprinkle the chopped bacon, sliced tomatoes, and smoked salmon on top.

Carefully roll the pastry up like a jelly roll, then slice it into 12 even pieces. Arrange the roll-ups on your prepared baking sheet and pop them in the fridge for about half an hour to chill. Finally, bake them in the oven until they turn a beautiful golden brown, around 18 minutes. Let them cool slightly before serving, and enjoy!
