Stir the onions, mushrooms, olive oil, vinegar, soy sauce, brown sugar, garlic, and pepper in a medium bowl. Put the steaks into a large zip-top bag, then pour the mixture over them. Seal the bag and pop it in the fridge to marinate for at least 8 hours, or overnight if you have the time.

When you’re ready to cook, set your oven rack about 6 inches from the broiler and preheat it. Line a baking sheet with aluminum foil and arrange the steaks on top.
