Directions
Lightly heat some oil in a large skillet over medium-high heat. Toss in the potatoes and onions, and cook them until the potatoes turn a nice golden brown and the onions become soft and see-through, which should take about 12 to 15 minutes. Meanwhile, warm up a smaller pan on medium-high heat. Cook the sausage along with the apple, cranberries, salt, pepper, fennel, rosemary, and a pinch of red pepper flakes for around 5 minutes until everything is nicely combined and fragrant. Once the sausage mixture is ready, stir it into the potatoes and onions. Give it a good mix, then serve it up warm and enjoy!
