Step 1
Lightly heat your oven to 425°F (220°C). In a bowl or shallow dish, mix together the mirin, miso, soy sauce, brown sugar, and lime juice. Pop the salmon fillets into the marinade and let them soak up the flavors for about 15 minutes.
Step 2
Heat a grill pan over medium heat and give it a good coating of oil. Place the salmon in the pan, saving the marinade for later. Cook the fillets for 2 to 3 minutes on each side, until you see nice grill marks. Then take them off the heat.
Step 3
Transfer the salmon to a baking sheet and spoon some of the reserved marinade over each piece. Slide the tray into the oven and bake for around 6 minutes, or until the fish flakes easily with a fork. Enjoy!
