Fire up your grill to high heat. Start by trimming off the tail and fins from the salmon, then make a few shallow cuts across the skin to help it cook evenly. Lay the salmon on three large sheets of aluminum foil, slightly overlapping them to create a sturdy base.

In a bowl, mix together the soy sauce, chile sauce, grated ginger, and minced garlic. Add the lime juice, lime zest, and brown sugar, stirring everything until itβs well combined. Spread this sauce over the salmon, making sure itβs nicely coated.

Fold the foil over the salmon and seal the edges tightly to keep all those flavors locked in. If youβre using charcoal, push the coals to one side of the grill and place the salmon on the cooler side, away from direct heat. For a gas grill, set the salmon on one side and turn off the burners directly underneath it. Close the lid and let it cook gently for about 25 to 30 minutes.

Once itβs done, carefully transfer the salmon to a serving platter. Pour any juices that collected in the foil over the fish, and finish with a sprinkle of chopped green onions for a fresh touch.
