Step 1
Heat your oven to 350ยฐF and grease an 8x8-inch pan with cooking spray. In a large bowl, combine the oats, flour, brown sugar, and baking soda. Mix in the melted butter until everything is well coated. Take about a third of this oat mixture and stir in the chopped cookiesโset this aside for the topping. Press the rest of the oat mixture evenly into the bottom of your prepared pan.

Pop the pan in the oven and bake for about 10 minutes, just until itโs set. Let it cool for a few minutes while you get the chocolate mixture ready. Melt the butter and half of the dark chocolate together over low heat, stirring until smooth. Take it off the heat and let it cool until itโs just lukewarm.

Stir in the brown sugar and vanilla. Beat in the eggs one at a time, making sure each one is fully incorporated before adding the next. The batter should look shiny and smooth. In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder, then fold this into the chocolate mixture. Stir in the remaining dark chocolate chunks.
Step 4
Spread this brownie batter over the oat base in your pan, then sprinkle the reserved cookie-oat topping evenly on top. Bake again for about 25 to 28 minutes, until the center is set and the topping turns a nice golden brown. Be careful not to overbake. Let the whole thing cool completely before slicing into bars.
