Combin the lentils and chicken broth in a pot, then add just enough water to cover everything. Bring it to a gentle simmer and let it cook until the lentils are tender but still hold their shape, which should take about 25 minutes. Keep an eye on it and add a little water if it looks like it’s drying out.

While the lentils are cooking, melt the butter in a saucepan over medium heat. Toss in the onion and cook it until it’s soft and starting to brown, about 5 minutes. Add the garlic and sauté for just half a minute until fragrant.

Once the lentils are done, scoop them along with their cooking liquid into the pan with the onions and garlic. Gently fold in the tomatoes, season everything with salt, and splash in the balsamic vinegar. Give it a gentle stir to combine, then serve it warm.
