Step 1
Gently heat your oven to 350°F and greasing a 9x13-inch baking dish. In a saucepan, bring water, half-and-half, and a pinch of salt to a boil. Slowly whisk in the grits, then lower the heat and let them simmer gently, stirring now and then, until they thicken—about 20 minutes. Once thickened, stir in the cheddar cheese and butter until everything is melted and smooth, then let it cool a bit.

While the grits are cooking, brown the sausage in a large skillet over medium-high heat, breaking it up as it cooks. Once it’s nicely browned and crumbly, drain off any excess grease. In a bowl, whisk together the eggs and milk. Then mix the cooked sausage, egg mixture, and chopped orange and red bell peppers into the grits.

Pour this mixture into your prepared baking dish and pop it in the oven. Bake until the casserole is set and golden on top, which should take between 45 and 60 minutes. Let it cool slightly before serving.
