Step 1
Tos the garbanzo beans, olive oil, panko bread crumbs, onion, egg, parsley, curry powder, garlic powder, lemon juice, and pepper into a food processor or blender. Pulse everything until you get a coarse mixture—if it feels too wet, add a bit more bread crumbs until it holds together nicely.
Step 2
Scoop out about a tablespoon of the mixture and roll it into a ball, then gently coat it with some extra panko bread crumbs. Place each one on a plate as you go, until you’ve used up all the mixture.
Step 3
Pour enough olive oil into a deep skillet to come about an inch up the sides, then heat it over medium heat. Once hot, carefully add the falafel balls in batches so they’ve got room to cook evenly. Fry them for around 2 to 3 minutes on each side, until they turn a beautiful golden brown and get crispy.
Step 4
When they’re done, transfer the bites to a plate lined with paper towels to soak up any extra oil. Let them cool for a minute or two, then dig in!
