Tips To Improve This Recipe
- Cook over medium heat to soften the cabbage without burning the apples.
- Add a splash of vinegar or lemon juice to brighten the flavors at the end.
Step 1
Warm the coconut oil in a large skillet over medium heat. Add the bacon, onion, and garlic, and cook them together, stirring now and then, until everything smells delicious and the bacon starts to crisp, about 5 minutes. Next, toss in the cabbage and stir it around so it gets nicely coated with the bacon and oil. Cover the pan, turn the heat down a bit, and let it cook gently, stirring occasionally, until the cabbage starts to soften—this should take around 10 minutes.
Step 2
While the cabbage is cooking, mix the cider vinegar and brown sugar in a small bowl until the sugar dissolves. Pour this mixture over the cabbage, then add the apples and give everything a good stir. Cover the skillet again and keep cooking, stirring every so often, until the cabbage is tender and most of the liquid has evaporated; this will take about 35 minutes.
Step 3
When it’s done, take the pan off the heat and let it sit, still covered, for about 5 minutes. Finally, season with salt and pepper to taste, give it one last stir, and you’re ready to serve.
