Step 1
Make four foil packets using heavy-duty aluminum foil. Take a 1-foot square piece, fold it in half, and smooth it out flat. Then, fold each of the short edges over three times, about a quarter-inch each fold, pressing down firmly after each fold to create a sealed edge. You’ll end up with a pouch that’s open on one long side. Repeat this with the other pieces of foil.

Toss the potatoes, chicken cubes, red peppers, onion, celery, and barbecue sauce together in a bowl or a large resealable bag until everything is well coated. Divide the mixture evenly between the foil packets, placing it inside each one.
Step 3
Once filled, carefully roll up the open end of each packet to seal everything inside. Place the packets on a grill over hot coals and cook for about 25 minutes, or until the potatoes are tender and the chicken is cooked through.
