Bring a large pot of water to a boil, then drop in the potatoes and let them cook for about 5 minutes. Once theyβre just tender, drain them and set them aside. Meanwhile, warm up some oil in a deep cast iron skillet over medium heat. Toss in the zucchini and onion, cooking until they turn golden and soft, which should take around 5 to 7 minutes. Add the potatoes back to the skillet and give everything a gentle stir to combine.

In a bowl, beat the eggs with oregano, a pinch of cayenne pepper, salt, and pepper. Pour this mixture evenly over the veggies in the skillet and stir gently with a fork to distribute the eggs. Let it cook undisturbed until the eggs start to set, about 5 to 10 minutes.

While the eggs are cooking, move an oven rack so itβs about 6 inches from the broiler and preheat the broiler.
