Directions
Cook the sausage slices in a large nonstick skillet over medium-high heat until theyβre nicely browned, about 3 to 5 minutes on each side. Once theyβre done, move them to a plate but leave any rendered fat in the skillet. Add a splash of olive oil to the skillet and warm it over medium heat. Toss in the onions and cook, stirring occasionally, until they start to turn golden and soften, which should take around 8 to 10 minutes. Next, add the garlic and cook just until it smells amazing, about a minute. Put the sausage back into the skillet, then pour in the chicken broth along with the potatoes and a good pinch of pepper. Bring everything up to a boil. Once boiling, stir in the kale and cannellini beans, lower the heat a bit, and let it all simmer gently until the sausage is cooked through and the potatoes are tenderβthis usually takes about 30 minutes. Give it a taste and add salt as needed before serving.
