Directions
Warm your oven to 350°F and lightly grease a couple of baking sheets. In a large bowl, mix together the pumpkin, honey, shortening, water, egg, and vanilla until everything is nice and creamy. In a separate bowl, whisk the oats, flour, brown sugar, cinnamon, ginger, baking soda, baking powder, salt, nutmeg, and cloves until well combined. Pour the dry ingredients into the pumpkin mixture and stir until the dough comes together. Scoop out rounded teaspoonfuls of dough and drop them onto your prepared baking sheets, spacing them a bit apart. Pop them in the oven and bake until the biscuits turn golden and feel set, about 12 to 15 minutes. Let them cool for a few minutes before enjoying!
